Low-fat Vegan cream of celery soup

Ingredients
Celery - approximately 4 cups choppedOne onion choppedAbout one cup of chopped carrots4 cups of vegetable broth (or 2 cans)Two medium sized potatoes Salt, pepper, nutmeg to tasteCashew, almond, or other "milk" is optional
Directions
Sauté onion in a little water. Add seasonings. Add celery, carrots, and potatoes. Cover and simmer for about 30 -40 minutes, until vegetables are soft. Use immersion blender to make creamy, but leaving some lumps. Or you use regular blender or food processer in batches.
Return to heat and add kale until soft.
