Homemade Macaroni and Cheese

Ingredients
Elbow Macaroni, 8 ozButter, unsalted, 1 tbspFlour, white, .25 cupMilk, 2%, 2.25 cupCheese CoJack, 6 ozAmerican Cheese, 1 ozSalt, pepper
Directions
Cook macaroni; drain. Melt butter over very low heat; add flour, cooking and stirring over low until smooth. Gradually (a couple spoonfuls at a time) add milk, making a roux. As you add the milk, the flour/butter mixture will get thinner. Once it's the consistency of thin pudding, you can pour in the remaining milk. Cook 3-5 minutes then add cheeses. Add salt and pepper to taste. After cheeses melt, add macaroni. Combine and serve.
