Steak Soup

2 lbs lean ground chuck, browned and drained5 cups water1 large onion, chopped4 ribs celery, chopped3 carrots, sliced2 14 1/2 oz cans low sodium diced tomatoes10 oz pkg frozen mixed vegetables5 beef bouillon cubes1/2 tsp black pepper1/2 cup I can't believe it's not butter light1/2 cup flour1/2 tsp salt
1. Combine chuck, water, onion, celery, carrots, tomatoes, mixed vegetables, bouillon cubes and pepper in slow cooker.
2. Cover. Cook on low 8 hours.
3. One hour before serving, turn to high. Make a paste of melted butter and flour. Stir until smooth. Pour into slow cooker and stir until well blended. Add salt.
4. Cover. Continue cooking on high until thickened.
Serving Size: Makes 10 servings
