Lauren's Mock Peanut Butter Cookies

Ingredients
1 cup sugar1 cup Trader Joe's Sunflower seed butter1 tsp gluten free, corn free vanilla extract1 tbsp chia seeds3 Tbsp water
Directions
Preheat oven to 350*F

Process (grind) chia seeds in food processor. Mix chia seeds with water in small bowl; set aside for 5 minutes or until gummy.

In medium bowl, cream together sunflower seed butter and sugar. Add in vanilla and chia seed mixture. Mix thoroughly.

Roll into walnut-sized balls and place on parchment lined cookie sheet. Flatten with fork to make criss-cross design.

Bake 10-12 minutes. Cool and eat!
