Italian Veggie Salad

Ingredients
1/4 cup Red pepper, Chopped 1 Cup Carrots, chopped 1 Cup Cauliflower, chopped1 Cup Cucumber (with peel), chopped 1/4 Cup Onions, diced1/2 cup Black Olives, Chopped1/4 cup Sweet Peppers ( red,yellow or orange),chopped1 cup Broccoli, chopped1/4 cup Green Pepper, Chopped1/2 Cup Light Italian Dressing1 Tbsp. Bragg Apple Cider Vinegar (or any type)Dash Black PepperDash Salt Chop and dice all vegetables and place in a bowl. Mix Italian dressing, apple cider vinegar and salt/pepper in a separate bowl. Add to bowl of vegetables and stir. Refrigerate for at least 2 hours so the dressing will soak into veggies.For a bolder taste add a TBSP or two of balsamic vinegar or hot sauce.Stir and serve as a side or add to lettuce for a tasty salad.Add fresh tomatoes or canned tomatoes if you prefer.
