Leftover Roast Beef and Barley

Ingredients
Butter, 4 TbspOnion, 1 large, chopped or slicedBarley, raw, 1/2 cupBeef Broth, 2 cupsJalapeno Pepper, wholeLeft over Roast Beef with Vegetables, approx. 2 cupsThyme, 1 tspGarlic salt, 1 tspParsley, dried, 1 tbspBlack Pepper, 1/4 tspSalt, to taste
Directions
Melt butter in large sauce pan. Add onion and cook over med-low heat until onion starts to brown. Add barley and cook about 2 minutes, stirring often. Add beef broth, jalapeņo pepper and seasonings. Lower heat, cover and simmer about 40 minutes or until barley is tender. Add left over roast beef and heat through. Serve with crackers or toasted bread and sliced cheese.
