Potato Croquettes

4 large russet potatoes, peeled1 small onion, peeled2 eggs, beaten3 tbsp bread crumbs2 tbsp milk or cream2 tsp chives, fresh or frozen1 garlic clove, crushedsalt and pepper to taste
Grate potatoes and onion with food processor; transfer to large bowl. Or, grate the potatoes and onion by hand into a large bowl. Add remaining ingredients to make a thick batter. If the batter is too thin, add more bread crumbs until you can easily pick the batter up ion your hands. Form into 8 pancakes.
Heat a skillet and spray with pam. Cook on both sides until brown and thoroughly cooked. Sprinkle with salt and pepper. Keep warm on paper towels ina very low oven ( 200 degree)
