Squash Croquettes

Ingredients
2 cups yellow squash finely chopped or grated1 cup onion, finely chopped1 to 2 teaspoons fresh chives chopped1 egg beaten1 teaspoon salt1 teaspoon pepper1/2 cup plus 1 tablespoon all-purpose flourvegetable oil
Directions
combine squash, onion, chives, egg, salt and pepper. Mix in flour. Heat oil over medium-high heat and drop batter by tablespoonfuls into oil. Cook about 3 minutes per side and drain on paper towels.

Serving Size: makes about 12 croquettes
