Black Bean, Corn & Quinoa Salad

2 cups quinoa4 cups chicken stock4 oz crumbled feta1.5 cups black beans (or 1 can rinsed)1.5 cups frozen corn (or 1 can)1 cup spinach (fresh)1/2 red onion dicedDressing:1/2 cup lime juice (from 2 limes)3 TBLS red wine vinegar1/4 cup Extra virgin olive oil1 TBLS cuminsalt and pepper to taste
Place quinoa and chicken stock in pot and cook with lid on about 20 mins till liquid is absorbed. In large bowl, combine, beans, corn, spinach and onion. Let cooked quinoa cool then combine with the bean mixture. For the dressing; combine lime juice, EVOO, red wine vinegar, cumin, salt and pepper. Pour over salad and serve
