Ingredients
brown rice 1 cup water 1 can veggie stockassorted veggies and seasoning:garlic powder 1 tspblack pepper 1 tsp1 tsp ground cayanne pepper or more to tasteortega fajita seasoning 3 tspfresh cilantro 3 Tbsjuice from one lime1 cup carrots chopped1 yellow bell pepper chopped1 cup yellow onion chopped1 cup sweet corn1 can black beans drained and rinsed1 can fire roasted chopped tomatoes
Directions
cook brown rice according to directions in a saucepan using your 1 cup water and your can of veggie broth as liquid. meanwhile chop onions, pepper, and carrots and saute in a skillet. when rice is done, mix everything together and simmer for a few additional minutes.
