Slower-Cooker Savory Mediterranean Chicken Breast

1 lb. chicken breasts, (cut into 2" cubes for faster cooking)1 c. no-salt added chicken broth1/4 c. dry white wine3 T Pearl tapioca3-4 oz. (about 1/2 can) artichoke hearts, drained and quartered3 oz. (about 1/3 c. pitted kalamata olives)1 can (about 1.25 cup) diced tomatoes, unsalted AND undrained1 tsp dried thyme3 tsp curry powder.5 tsp black pepper
Combine all ingredients in a crock pot and mix well. Cover and cook on low for 4 hours. If chicken is still pink in the center after 4 hours, continue cooking on low, checking for doneness after each additional hour.
