Slow Cooker Chicken tortilla Soup

1 lb chicken breasts15 oz frozen corn15 oz can diced tomatoes5 cups chicken stock3/4 cup onion, chopped3/4 green pepper, chopped1 Serrano or Jalapeno pepper, minced2 cloves garlic1/4 tsp chili powder1 1/2 tsp salt, divided1 tsp ground pepper, dividedMonterey Jack cheese, shredded
Add first 9 ingredients plus 1 tsp salt and 3/4 tsp pepper. Cook on high for 4 hours or on low for 8 hours. Prior to serving, shred the chicken and add the rest of the salt and pepper. Stir and mix gently in the crock pot.
Serve in bowls topped with cheese. (Other toppings not included in calorie count are light sour cream, avocado slices or seasoned tortilla chips.)
