SALMON CROQUETTES WITH DILL SAUCE

Ingredients
1 & 1/2 cup plain yogurt1/4 cup Dijon mustard2 T. chopped fresh dill1 t. lemon zest1T. lemon juicepinch red pepper2 14.75 cans pink salmon2 cups finely chopped celery4 large eggs, beaten1 cup finely chopped onion1-2 t. salt1-2 t. pepper2-3 T. olive oilscallions
Directions
Whisk together yogurt & next 5 ingredients. Drain salmon and flake it. Stir celery & next 5 ingredients into salmon. Use medium bowl. Shape into six 4-inch patties (about 3/4 cup). Cook in batches in 2-3 Tbsp. hot oil in large skillet over med.-high heat. 5 minutes each side.Serve with yogurt mixture (first 5 ingredients)
