Whole Wheat Strawberry Muffins

2 cups fresh strawberries, sliced1 tablespoon splenda3 1/8 cups whole wheat flour1 cup splenda1 tablespoon cinnamon1 teaspoon salt1 teaspoon baking soda1 1/4 cups unsweetened applesauce2 eggs + 4 egg whites, beaten
1. Preheat oven to 350 degrees F. Prepare two muffin tins with nonstick spray or paper muffin cups.
2. Slice strawberries and place in medium bowl. Sprinkle lightly with 1 T splenda. Set aside.
3. Combine flour, 1 cup splenda, cinnamon, salt, and baking soda in large bowl and mix well. Blend oil and egg into strawberries. Add strawberry mixture to flour mixture, blending until dry ingredients are just moistened. Batter will be thick. Divide into muffin tins.
4. Bake for twenty minutes, or until tester inserted comes out clean. Serve warm or cool.
Makes 24 muffins.

SUSANISLOOSIN
These are actually pretty good. I was skeptical because the batter was so thick when I put it into the muffin tins. Also, the recipe calls for applesauce but in the directions it asks for oil. I used the applesauce instead of the oil. Pretty good though. Sure I'll make it again! - 4/23/09
