Zucchini and Squash Bake

1 tbsp, extra virgin olive oil2 cups sliced zucchini2 cups sliced squash1 cup raw chopped purple onion1 tsp salt1 tsp pepper1/4 cup fat free mozarella shredded cheese
sprinkle you EVOO on a baking pan. make sure you spread it all over the pan so the vegetables won't stick. Take your sliced zucchini, squash and onion and spread on the baking sheet. Salt, pepper and then spread the mozarella on top of all of it. Put in the oven at 375-400 degrees and bake for 20 minutes (depending on your oven)
