Aunt Mary's Jade Soup

Ingredients
2 Whole Boneless, Skinless Chicken Breasts 5 cups chicken broth 2 egg whites 1 T Cornstarch 1 T Salt 30 Spinach leaves 2 T Olive oil 1 T Sherry 2 T Cornstarch dissolved in 2 T water.
Directions
) Chop chicken very fine, soak in 1/2 cup chicken stock.
2) Beat egg white stiff. Gently fold in cornstarch, Chicken & 1/2 T of salt
3) Cook spinach in boiling water Drain well. Squeeze out water and chop very fine.
4) Heat oil in pan to 400 or very hot stir fry spinach about 30 seconds. Pour in remaining 4 cups of stock & sherry over the spinach. Bring to a boil.
5)Add chicken. mix. Bring to a boil. Stir Rapidly. Season with 1/2 T salt and thicken with dissolved cornstarch.
This can be made ahead of time and it can be frozen.
