Paleo Veggie Hash

Ingredients
1 medium sweet potato1 cup chopped red/yellow bell pepper1 cup chopped broccoli1/4 cup diced onion(red or white)I had white.1.5 cup chopped fresh mushroomPam Spray
Directions
Chop your veggies, but keep in separate piles on your cutting board.
Spray your heated skillet, saute potato first for just a few minutes, add onion and peppers next.
Last, add broccoli and mushrooms.
Putting a lid on top will cook your veggies faster.

Serving Size: Half the batch.
