Oatmeal Muffins

Ingredients
1 1/2 cups ground oatmeal3/4 cup oatmeal2 tsp baking powder1 tsp cinnamon3/4 c milk ( I use lactaid)2 eggs lightly beaten1/3 c honey1 ripe banana2 tbls EVOO1 tsp vanilla1/4 c walnuts (optiional)1 c fresh blueberries ( optional)
Directions
Grind 1 1/2 cups oatmeal into flour and blend with remaining dry ingredients. Beat eggs lightly and add to wet ingredients. Stir in wet ingredients into dry until just blended. Fold in blueberries. Pour into lined muffin tin. Bake @ 375 for approximately 15-20 minutes.
