1 bag frozen southern style hash browns2 boxes of precooked bacon (cut into pieces)2 cups shredded cheddar cheese8oz ground pork sausage24oz Low fat Cottage Cheese7 Eggs (Beaten)
Cook sausage, drain, rinse, and set aside to cool. Mix potatoes and cottage cheese together. Add shredded cheese, cooled sausage, and cut up bacon, mix well. Place in a greased 9x11 baking pan (do not pack the mixture down), pour beaten egg mixture over potato mixture and bake at 375 for 55-60 minutes.
