Little Italy Mushrooms

Ingredients
-4 Bacon Strips, Diced-30 Medium Fresh Mushrooms-1 Cup Garlic Croutons, Crushed-1 Cup Part Skim Mozzarella Cheese, Shredded (About 4 Ounces)-1 Medium Tomato, Finely Chopped-1/4 Pound Ground Fully Cooked Ham-1/4 Cup Parmesan Cheese, Grated-2 Tablespoons Parsley, Minced-1/2 Teaspoon Oregano
Directions
In a large skillet, cook bacon over medium heat until crisp. Remove to a paper towel and drain the drippings. Reserve 1 tablespoon of the drippings. Remove the stems from the mushrooms and set the caps aside. Finely chop half of the stems and throw away the remaining stems. Dice the bacon. Add the drippings reserved, stems and bacon back into the skillet and saute for 2-3 minutes. Remove from the heat and stir in the remaining ingredients. Firmly stuff the mixture into the caps and place in a greased 15x10" baking pan. Bake at 425 for 12-15 minutes or until the mushrooms are tender.
