Beet salad Joe's

Ingredients
6 beets boiled1 cup onion your choice red, white, yellow etc.2 tsp fresh thyme can use dried (adjust)1 tbs fresh oregano can you dried (adjust)3 tbs olive oil.25 cup cider vinegar (substitute but cider is best)1 clove garlic sliced thinFeel free to adjust ingredients to taste.
Directions
Wash beets and boil to desired tenderness
allow to cool then peel (by hand) under running cold water they should peel easily
Thin slice onion
Micro plane garlic
Chop thyme and oregano if fresh
then
add with all the other ingredients in a suitable container
Mix and marinate and refrigerated overnight
