chicken noodle soup

Ingredients
Skinless chicken breast1 pint Chicken stockhandful of pak-choihandful of shiitake mushroomscup of rice noodles1-2 cloves of garlic2" piece of fresh ginger1 x red chilisqueeze of lemonteaspoon of soy sauce (to taste)fresh coriander
Directions
Dry fry chicken breast, ideally in a ridged skillet, for about 5-10 mins so that chicken is cooked through.
Cook noodles according to packet
Chop ginger and garlic small and add to pint of stock in a pan. Bring to boil.
Add mushrooms and pakchoi for 2 mins.
Put cooked noodles in bottom of bowl, add chopped cooked chicken.
Add deseeded and sliced red chili and soy sauce
Pour over broth and vegetables
Squeeze on lemon and add coriander.
Yummy.
