Vegan Red Beans with Tofurkey Andouille Sausage

2 c (1 #) dried red beans3 c onion, chopped (3 medium)3 c celery, chopped1 c green pepper, chopped ( 1 medium)3 cloves garlic, minced2 tbsp olive oil4 c water or vegetable stockSeasonings:1 tbsp cumin1 tbsp chili powder2 tbsp apple cider vinegar1 tbsp Worcestershire sauce3 tsp vegetable base (to taste if using water instead of stock)cayenne or red pepper flakes to taste
Soak and cook beans as per directions; drain. Saute vegetables in olive oil until tender. Add water or stock to beans, then add vegetables and bring to a boil, turn down to simmer. Add seasonings and simmer about 1/2 hour until flavors are well-blended and desired thickness. You can mash some of the beans and return to the pot to make it thicker. Serve with brown rice.
