16 oz Chicken breast, no skin4 unit Chicken leg4 unit Chicken thigh10 oz Corn Flour5 tbsp Cilantro, raw1.5 cup Red Ripe Tomatoes, chopped.5 cup Onion, raw.5 cup Green pepper (bell pepper),raw1 tsp Ground Annatto1 tsp complete seasoning1 tsp Black pepper1 tsp Salt16 cups water, tap
Chop chicken into small pieces. Season with complete seasoning, black pepper, salt. In a large pot brown chicken with a little bit of water. Add chopped vegetables and 8 cups of water and cook until chicken is tender. In a medium bowl add the other 8 cups of water and stir in the corn flour, salt and Annatto. Using a strainer pour the contents into the pot and turn to medium heat. Cook for another 10 mins or until the color is no longer milky. Serve with corn tortillas or eat alone. Make 10 servings.
