COOKIE INGREDIENTS 3/4 CUP BUTTER1/4 CUP GRANULATED SUGAR1/4 CUP CONFECTIONER SUGAR2 TBLSPN GRATED LIME ZEST2 TBLSPN LIME JUICE1/4 TEASP SALT1.5 CUP FLOURFOR GLAZE3/4 CUP CONFECTIONER SUGAR5 TEASP. LIME JUICE1 TEASP. GRATED LIME ZEST
CREAM BUTTER/SUGARS UNTIL LIGHT (ABOUT 5 MINS)
ADD LIME ZEST, LIME JUICE, THEN ADD FLOUR UNTIL JUST COMBINED..TRY NOT TO OVER MIX THE DOUGH.
DUMP DOUGH ONTO PARCHMENT PAPER AND SHAPE INTO LOG ABOUT 8" LONG, 1.5" HIGH, 2.5" WIDE, ROLL IT INTO THE PARCHMENT PAPER AND REFRIGERATE FOR AT LEAST 1 HOUR UP TO OVERNIGHT.
BAKE AT 350 FOR 15 MINS, TURING 1/2 WAY. COOKIES SHOULD BE PUFFY AND SLIGHTLY GOLDEN BROWN. I BAKED MINE AT 350 IN A SMALL CONVECTION OVEN FOR 13 MINUTES AND THEY WERE FINE.
TRANSFER TO WIRE RACK UNTIL COMPLETELY COOLED THEN GLAZE.
