1c Applesauce3/4c sugar1/2c milk1 1/2c carrots grated2c oat flour (or any flour)1t baking powder1/2t baking soda1/2t cinnamon, ground
Preheat oven to 400F. Spray muffin tin or line with papers. Add applesauce, splenda, milk and carrots to large mixing bowl. Mix well. Sift flour, baking powder, baking soda, and cinnamon over mixture. Stir until smooth. Spoon batter into cups. Bake on middle shelf until tooth pick inserted comes out clean. 13-20 minutes.
