1 Cup shortening3/4 Cup sugar2 eggs1 C shredded carrots2 cups all purpose flour2 t baking powder1/2 t saltOrange IcingJuice of 1/2 orange (3-4 tablespoons)grated rind of 1 orange1 tablespoon butter1 1/4 sifted powdered sugar
Cream shortening and sugar, add eggs. Mix well. Add shredded carrots. Combine the flour baking powder and salt and add to carrot mixture. Drop by rounded spoonfuls onto ungreased cookie sheets. Bake at 400 degrees for 8-10 minutes or until lightly browned. Remove to wire racks to cool. Frost with orange icing.
