Quinoa Stir Fry

Ingredients
Directions
1 lb chicken breast - cut into small pieces1 cup shredded cabbage1 sliced green pepper1 sliced red pepper1 sliced yellow pepper (or orange, doesn't matter)2 spanish onions3 eggs1 cup low sodium chicken broth1 tsp olive oil or pam3 tbsp soy sauce3 cups cooked quinoa (about 1 cup uncooked)4 cloves garlic2 packages sunbird brand stir fry mix
use a large pot
brown chicken breast
add garlic and cabbage, stirfry until soft
add peppers and onions and chicken broth - simmer until soft
add cooked quinoa
push all ingredients to side of pot, crack 3 eggs into empty side and scramble.
Add sunbird mixes and soy sauce to top of vegetable side.
When eggs are scrambled, stir the entire pot together.
Serving Size: about 7 - 1 cup servings
