Slow Cooker Enchilada Quinoa

1 pound ground extra lean turkey browned1 1/2 C uncooked quinoa, rinsed1 can of black beans, drained and rinsed1 C frozen corn1 can diced tomatoes1 small can of green chillies 1/2 C Fresh Salsa1 tsp minced garlic1/2 C diced onion1/2 C sweet bell peppers1 C water1 14oz can of enchilada sauce1 Tbsp chilli powder1 tsp cuminTop with cheese, sour cream, cilantro, and green onions if you like!
1) Brown your turkey if you haven't done that yet.
2) Place turkey in the bottom of the slow cooker then layer the remaining ingredients in one after another.
3) Stir to combine and let cook on high for 3 1/2 hours.
