2 pounds veal shank, cut in short lengths1/2 c. all-purpose flour2 cloves grlic, crushed1 large onion, chopped1 large carrot, chopped2/3 cup dry white wine2/3 beef stock1 (14.5 ou.) can diced tomatoessalt & pepper to taste
Dust veal shanks lightly with flour. Melt butter in skillet. Add veal and cook until brown on the outside. Remove from pan. Add garlic & onion to skillet, cook until tender. Return veal to pan, and add carrot and wine. Simmer x 10 mins. Pour in tomatoes and beef stock, season with salt and pepper. Cover and simmer on low heat for 1 1/2 hours, basting occasionally.

We have an AWESOME butcher Pam and we LOVE this recipe! Hope you enjoy it as much as we do! The first time it took me a little bit of time to make, but now I am a seasoned professional and actually am cooking it tonight!
