curried zuchini soup

2 zuchini -chopped1 med onion choppped1 clove garlic-minced1/2 can coconut milk1cup frozen peas1/2 cup frozen corn1 cup no sodium chicken bouilloni-2 tsp curry powder1/4 tsp nutmeg1/2 tsp ground cloves1/2 tsp cinnamondash of fresh ground black pepper
saute onion in oil until it begins to caramelize
add garlic and saute for 1 min
add zuchini and cook until tender
mash or blend onion, garlic and zuchini until fairly smooth
add coconut milk, chicken broth, and spices
simmer for 10-15 minutes and taste to correct spices
add corn and peas and simmer for ten minutes or until vegetables are heated through
Serving Size: makes 4 2-cup servings
