Joey's chicken salad sandwich filling

Ingredients
1 oz (28 grams) chicken breast, boiled cooked and shredded2T Kraft Miracle Whip light10 grams seedless grapes, chopped5 grams pecans, choppedsalt & pepper to taste
Directions
I generally boil a batch of chicken breasts or tenders in salted water then cool and shred and store in the fridge for 2-3 days to use in salads, soups and sandwiches.

Separate 28 grams of said chilled chicken (I use a scale to measure all of my foods). Chop up 10 grams worth of seedless red grapes and 5 grams of pecans and add to the chicken. Mix in 2 tablespoons of Kraft miracle whip light and taste for seasoning. Add salt and pepper as needed, even a little curry powder for an exotic twist.

Makes one sandwich. I make mine on Nature's Own light bread (80 calories for 2 slices) and dress with some lettuce and tomato if desired.

    I've made this chicken salad and it is very good. I have some great variations to try..add some low-fat vanilla/plain yogurt and some cut up apples. The yogurt makes it much creamier and you don't need as much Miracle Whip. - 9/10/08
