Spicy Adzuki Bean Stew

1/2 c dried adzuki beans4 c water1 T canola oil1 medium yellow onion, chopped5 garlic cloves, minced1.5 c peeled and diced sweet potatoes1 c carrots, peeled and diced4 inches ginger, peeled and minced2 T soy saucecayenne to taste
Start simmering adzuki beans in the water. Meanwhile, sauté the onions and garlic in the oil. When they are softened, add them to the soup pot. Then, add the sweet potatoes, carrots, and ginger. Cook for an hour, or until the beans are soft. Then add the soy sauce and cayenne.
