Pollo Con Papa - Chicken with Potatoes in Tomato Sauce

8 Chicken Leg Quarters or 16 Thighs1 TSP Salt1 Drizzle Olive Oil1 Whole Onion, Chopped2 Jalapeno Peppers3 Cloves Garlic, Smashed18 Roma Tomatoes, Sliced6 Potatoes4 Cubes Chicken Boullion
In a large pan, boil chicken in water with salt and a bit of garlic. Add pepper if desired.
Prepare vegetables. In pan, start with onion and diced jalapeno peppers. Add garlic. Finally, add tomatoes.
Once tomatoes are complete moist and the onions are translucent, add potatoes.
Cover and cook until potatoes are tender.
Drain chicken and add to the tomato sauce mixture.
Cook until heated through.
