Spanish omlete & toast

Ingredients
3 egg whites1 tsp cajun seasoning1 Tbsp olive oil1 Tbsp chopped onion or green onion1 Tbsp chopped/sliced green or black olives2 oz thawed/ raw spinach1 Tbsp chopped fresh tomato1 oz crumbled Feta cheese 1 slice toasted whole wheat 7grain bread
Directions
Separate the egg whites from the yolks and discard the yolks.
Add the cajun seasoning and spinach to the whites and whisk for 30 seconds.
Chop/dice onions, olives and tomatoes.
Heat olive oil in omlete or small frying pan and add onions, olives, tomatoes. Saute until onions are transparent.
Add egg white mixture and dont touch until the whites begin to form/harden.
Add feta cheese and cook until your omlete is done.
Toast your bread to desired doneness and enjoy!
Makes 1 serving of a large scrumptious omlete and glorious bread. This dish will keep you going till lunch!
