No Knead Skillet Bread

2c lukewarm water1 pkg. (2.25tsp) dry active yeast4 1/3c all pourpose flour1/2TBSP Kosher Saltolive oil (1 tsp?)rosemary, dried (1 tsp?)
In a large bowl, mix well the yeast and water. Wait about 2 minutes then add salt and 1 cup of the flour. Mix with a wooden spoon. Stir in the rest of the flour, 1 cup at a time. Cover with plastic wrap and let rise 1 hour.
DO NOT PUNCH DOWN
Oil the bottom of a 10-12" iron skillet.
Sprinkle a good amount of flour on top of the bread and cover your clean hands. Take dough and form into a disk. (Dough will be sticky). Place in Iron skillet.
Cover with a towel and let set 30 minutes.
Preheat oven to 400 degrees.
Drizzle top of bread with oil, and sprinkle with rosemary and a little more salt if you like.
Mark an X in the top with a sharp kife.
Bake 35-40 minutes.
Serving Size: 8 pie shaped slices
