Carrot tea cake

1 1/2 cups grated carrots1 1/2 cups flour1/2 cup brown sugar, packed1 stick unsalted butter, softened2 eggs, slightly beaten1 large banana, mashed1 1/2 tsp. vanilla extract1 tsp. baking soda1/2 tsp. cinnamon1/2 tsp. nutmeg1/4 tsp. saltFROSTING:8 oz. softened fat free cream cheese1/3 cup powdered sugar1/2 tsp. vanilla extract
Preheat oven to 325 degrees. Grease 1 loaf pan.
Combine dry ingredients in a bowl.
Grate carrots and mash banana.
Cream butter and sugar together until fluffy.
Add eggs. Add vanilla, banana and fold in carrots.
Add dry ingredients slowly until combined. Bake 55 to 60 minutes. Cool. Mix frosting and top cake.
Serving Size: Makes 1 loaf 10 servings
