Sweet Potato w/ Jamaican Jerk Chicken and Mango Salsa

Ingredients
Chicken:4 boneless skinless chicken thighs1 T. Jamaican jerk seasoning1 T. olive oilMango Salsa:2 mangos peeled and diced1/4 C. minced red onion1/4 C. minced green pepper1 large jalapeno diced2 T. minced cilantro2 limes juiced1 large sweet potato (baked then cut in half)2 T. honey
Directions
Chicken:
Marinate chicken in olive oil and jerk seasoning at least one hour. Grill until done.

Mango Salsa:
Combine all ingredients and let rest in refrigerator at least one hour.

Sweet Potato:
Wrap in tin foil with a drop of olive oil and touch of salt. Bake at 375 degrees for 1 hour.

Layer salsa and grilled chicken on top of baked and halved sweet potato and drizzle with honey.
