Pizza Quesadilla

2 to 3 thin slices of onion, diced2 tbsp canned black olives, drained & rinsed1/2 cup Diced Tomatoes, drain & let dry on a paper towel to soak up excess juices1 low carb, high fiber tortilla1 oz extra sharp cheddar cheese1 tsp italian season1/2 tsp basil
Heat skillet to med-high heat. Spray with cooking spray.
Mix all ingredients into bowl (yes even the cheese).
Place tortilla in hot skillet, add mixture to one half. After about 30 seconds, use a spatula to fold over the empty half of the tortilla. Cook each side 2 to 3 minutes until inside is hot an the tortilla is slightly browned on the outside.
Serving Size: makes one serving each
