Vegan Zucchini Rolls

Ingredients
1 long Zucchini4 tbsp. Vegan Cream Cheese1/2 cup Jasmine Rice, cooked2 medium Carrots1/2 cup Spring onion1 clove Garlic1 Lime, JuicedSalt and Pepper (to taste)
Directions
Peel the zucchini into long, thin strips and set aside. Add the rice, carrots, spring onions, garlic, lime juice, and salt and pepper to a food processor and mix until a paste is formed. Lay the zucchini strips flat and spread a light layer of vegan cream cheese on the, then spread the rice paste onto the strips. Roll the zucchini strips into neat little rolls and serve.
