Austrian Fish Goulash

2 pounds white-fleshed fish filletssalt and pepper to taste2 large white onions, thinly sliced1 garlic clove, minced2 tablespoons butter2 tablespoons canola oil2 tablespoons Hungarian paprika1 14.5 oz. can diced tomatoes22 oz. Yukon gold potatoes, pared and cubed32 oz. fish brothoptional, 1 bay leafwater, if needed
Cut the fish into cubes and season with the salt and pepper. Set aside. Saute the onions and garlic in a large saucepan in the butter and oil until tender. Stir in the paprika and cook 1 minute. Stir in the tomatoes and cook 3 or 4 minutes. Add the potatoes and fish broth to cover. Cook over medium heat, covered, for 10 minutes. Add chunks of fish and continue to cook until they are tender, about 10 minutes. Do not stir while the mixture is cooking but shake occasionally if the ingredients are sticking to the pan. Add a little water while cooking, if needed. Serves 6.
