2 tbsp extra virgin olive oil1 onion, chopped2 carrots, chopped3 stalks celery, chopped1/2 bell pepper (color of your choice), chopped3 cloves garlic1.5 packages of Westsoy Seitan Strips (or other meat analog of your choice, such as Gardein Chicken Strips or Beyond Meat Chicken Strips)1 tbsp paprika1/2 tsp sea salt1 cup low-sodium vegetable broth1 tbsp all-purpose flour1 container plain unsweetened non-dairy yogurt, such as Wildwood
Heat olive oil in a large saute pan. Add onion, carrots, celery, bell pepper, and garlic and cook until onions start to go translucent. Add the seitan and stir in the paprika, salt, and vegetable broth. Lower heat, cover, and simmer 15-20 minutes. In a bowl, combine the flour, yogurt, and a bit of the cooking liquid with a fork. This will help to keep the yogurt from curdling. Stir in the yogurt mixture to the dish and warm slightly.
