Black Rice with Sweet Potato and Leek

Ingredients
3/4 c black rice1 1/2 c water3/4 t salt2 T vegetable oil1 T ginger root, peeled and minced1 leek, cleaned and sliced1 medium sweet potato, peeled and diced1/2 T rice vinegarpepper to taste
Directions
Bring the rice, water, and 1/2 t of salt to a boil. Lower the heat, cover, and simmer for 35 minutes. Meanwhile, preheat the oven to 375 and prepare the sweet potato. Place the sweet potato onto a rimmed baking tray as you dice, then drizzle with 1 T oil, sprinkle with remaining salt, and mix on the tray, until the oil is evenly spread. Cover tightly with tin foil and roast for 30 minutes. Meanwhile, prepare the ginger and leek. Heat the oil in a large skillet over medium heat. Add the ginger and leek, and stir constantly, watching to avoid browning. Once the leek is softened, remove from heat and set aside. When the rice is done, stir in the sweet potato, leek, rice vinegar, and pepper. Taste to adjust seasonings. Enjoy! (One quick note -- the rice will turn everything dark, even a bamboo spoon!)
