Lemon Chicken Poppers

Ingredients
1 lb. ground chicken2 cups finely grated zucchini2 green onions, sliced1 TBSP parsley1 clove garlic1 TBSP lemon juice1/4 tsp chilli flakes (optional)1 tsp salt1/2 tsp pepper1 TBSP coconut oil (for frying)
Directions
After grating the zucchini, squeeze the pulp to remove some of the water.

Combine chicken, zucchini, green onion, lemon juice, herbs and spices in a large bowl. Mixture will be very wet.

Over medium heat melt coconut oil. Placed heaped teaspoons of the mixture into the pan in batches and fry until golden on the outside and cooked through (approx 5 mins each side).
