17 Day Diet Egg Breakfast Muffins

6 lg eggs1 serving (1/2 cup)of my 17 day diet turkey breakfast sausage crumbles or 1/2 cup lean turkey sausage crumbles4 TBL spoons Hormel Bacon pieces5 ounces fresh baby spinich sautéed in 1 tsp olive oil and 1 clove garlic1/4 cup skim milkTBL spoon dried onion flakes1 package (7oz)of Kraft fat free shreaded cheese..either cheddar or mozzarella or mixture of bothPinch of sea salt1/2 tsp pepper
Preheat oven 350
Spray 10 muffin tins with non stick spray
Saute spinich in tsp olive oil with garlic and pinch of salt
Place in bowl and cool in freezer for 5 minutes
Remove bowl and add eggs
Wisk eggs to scramble
Wisk in other ingredients
Ladle into muffin tins almost to top
Bake 30 minutes
Cool 5 minutes and run thin knife around each to loosen
Serving Size: Makes 10 muffins
