Plain quiche

7 eggs, large --well beaten1 cup milk, skim/nonfat1 cup cheddar, shredded1 cup mozzarella, shreddedpinch nutmeg2 pie crusts, ready made
Preheat oven 350
thaw crusts enough to prick holes with fork. then brown crusts in oven, just slightly.
beat eggs and add milk and a pinch or two of nutmeg. blend until well blended and then add the majority of the cheese, fold gently.
in the bottom of the slightly golden brown crust, sprinkle the remaining cheeses. pour egg blend into both crusts, evenly.
[note: at this point you can add bits of veggies or whatever you would like, but you will need to calculate the calories for them]
bake 45-50 minutes, until browned on top. use a tooth pick to see if the quiche has completely cooked and set.
