Lemon Almond Hearts

3 egg yolks120 g. Sugar1 t. Vanilla Extract1 t. Lemon extract 1 pinch Baking Soda200-250 g. Almonds (blanched and ground)Icing:100 g. Powdered Sugar1-1 1/2 tbsp lemon juice
Whisk the egg yolks and sugar together until thick and creamy. Add the vanilla and lemon extracts. Add almonds stirring until too hard to do. Add rest of the almonds by kneading until it is not very sticky. Roll out with ground almonds instead of flour to 1/4 inch thick and cut into hearts or other shapes.
Bake at 350 degrees F. for 10 minutes or more, just brown at edges.
Cool on wire racks.
Blend lemon juice into the powdered sugar to make a good spreading consistency do not use too much.
Serving Size: Makes about 36 cookies
