creamed leek & potatoes

Ingredients
Leeks, 140 grams Red Potato, 300 grams *Daisy Light Sour Cream, 2 tbsp2 Tbsp. I can't believe it's not butter *light*1 bouillion cube- sodium free300 mL water
Directions
peel and dice the potatoes , then finely chop the leak (i only use the leaves) and i put mine in the food precoessor to make it very small.

Melt the butter in a suace pan ,add the leek and saute for 5 minutes until a little soft, over low heat.
Then add the potatoes, water & bouillion cube (u can use chicken stock instead)
Bring to a boil , and then on medium heat simmer for 20 minutes , until the potatoes are soft.

Drain the vegetables , and mash to desired consistency , adding the sour cream.

Delicious!!
