Low Carb Fish Cakes

Ingredients
1 Tilapia filet (approx 3.5 oz) - chopped into cubes1 egg1 Tbs chopped red pepper1 Tbs chopped green or poblano pepper1 Tbs fresh parsley, chopped1 tsp Cajun seasoning1/4 tsp salt or herbamaredash black pepper2 -3 tsp oat fiber to thicken2 tsp palm oil or olive oil for cooking
Directions
put all ingedients in blender - blend or pulse till chunky pasted like consistency.
Shape into 2 patties.
Heat oil in fry pan over low to medium heat - add patties, flip when browned.
