Easy Seven Layer Rice Casserole

1 cup uncooked brown rice1 cup whole kernel corn, drainedsalt and pepper 1 cup tomato sauce1⁄2 cup water1/2 cup chopped onions1/2 cup green bell pepper, seeded and chopped1 lb lean ground beef, uncooked broken up into small pieces (do not pre-cook it will cook in the casserole dish, see recipe tips for seasoning)14 1/2 ounce can diced tomatoes (undrained)6 slices uncooked bacon, cut in half2 cups shredded cheddar cheese
1. Set oven to 450 degrees F.
2. Butter a 2 qt casserole dish.
3. Layer each ingredient in order given starting with the uncooked rice on the bottom of casserole dish, ending up with the bacon on top (save the cheese for the last 10 minutes of baking).
4. Cover, bake for 1 hour; uncover and continue cooking for 20-25 minutes longer.
5. Top with shredded cheddar cheese the last 5 minutes of baking.
Serving Size: Serves 6
